Dillon's Beanie
Mood:  happy

My Son Dillon needed a new hat. My knitting friend Ariel had the perfect Beanie pattern. It was easy to knit and worked up fast. I used Wool-Ease yarn, the color is called Wood. I used Wool-Ease, because I wanted the hat to be warm, and washable. Thanks for the pattern Ariel!!!

Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies

1 1/2 cups canned solid pack pumpkin
2 tbsp. milk
2 eggs, beaten
2 cups granulated sugar
1 cup vegetable oil
4 cups flour
2 tsp. baking soda
4 tsp. baking powder
1 tsp. salt
1 tsp. vanilla extract
2 tsp. ground cinnamon
6 oz. chocolate chips
1 cup chopped walnuts (optional)

Mix all dry ingredients together and add to the
remaining ingredients and mix well. Drop by
teaspoonfuls onto cookie sheet. Bake at 350 degrees
for 10-12 minutes.

Pecan Pie Muffins

Pecan Pie Muffins - Paula Deen

1/2 c. butter, softened
3/4 c. packed light brown sugar
2 eggs, beaten
1/2 c. all-purpose flour
3/4 c. chopped pecans

Preheat oven to 350 degrees. Grease and flour 8
muffin tins or use paper liners.

In a medium bowl, cream the butter and sugar. Add the
eggs and mix well. Add the flour and stir until just
combined. Stir in pecans.

Spoon the batter into the prepared muffin cups,
filling each about 2/3 full.

Bake for 25 minutes. Serve warm with butter.

Makes 8 muffins

No Bake Snickers Cheesecake

No Bake Snickers Cheesecake
1 ready made graham cracker crust
8 oz. cream cheese (softened)
1 jar Carmel ice cream topping
1 12 oz. cool whip
1 king-size snickers candy bar, broken up into bite-size pieces.
Let cream cheese stand to get to room temp. Take 1/2 the jar of ice cream topping and spread in bottom of crust... in a medium size bowl whip up the cream cheese, add the rest of the jar of ice cream topping, and mix well. Whip in the cool whip, then with a spoon fold in the snickers candy pieces.  Spread into the crust..refrigerate for at least an hour. Serve! (Keep refrigerated)!!

 

Caey and I made No Bake Snickers Cheesecake today. She also dressed up as me, with my glasses, and slippers on!! She looks just like me now!

Lacy Mock Cable socks

I bought some Knit Picks Bare yarn, and dyed it with Kool aid. Then I decided to knit the yarn into socks. I choose the Lacy Mock Cable Socks pattern. Which can be found here

Hand spun wool

Now Playing: Fall Arts Festival

I went to a Fall Arts Festival last Saturday. I bought this hand spun wool from a lady that lives in Groton, South Dakota. she raises the sheep, and cleans the wool and spins it all by herself.

I dyed it with Kool-Aid. I used strawberry, and pink lemonade flavors. To get this color. I think that I will either knit a pair of mittens with it. Or a hat. I haven't decided yet.

Butterscotch Oatmeal Bites

2 1/2 cups miniature marshmallows
1 cup butterscotch chips
1/4 cup peanut butter
2 tbsp butter
3 cups Cheerios
1/2 cup raisins
1/2 cup flaked coconut

In a heavy saucepan, combine the marshmallows, chips, peanut butter, and butter. Cook and stir over medium-low heat until chips and marshmallows are melted. Remove from the heat. Stir in the cheerios, raisins, and coconut. Drop by 1/4 cupfuls onto waxed paper. Let stand for 10 minutes. Yield: 14-16 cookies

Apple Dump Cake

Apple Dump Cake

2 cans Apple pie filling
1/4 cup Brown sugar
1 package Butter pecan cake mix
1 cup Pecans; chopped
1 cup Margarine or butter

Spread 2 cans of apple filling in a 9 x 13 pan.
Sprinkle the sugar, then cake mix, then pecans over
apples. DO NOT STIR. Slice thin the 2 sticks of
margarine or butter and layer over top. Completely
cover cake. Bake at 350~ for 45 minutes to 1 hour.
